Wednesday morning, West Fork Whiskey Co., 10 E. 191st St., Westfield, held the ribbon cutting and media day at its 30,000 square-foot facility. The family-friendly restaurant, Mash House, and the 21-and-older cocktail lounge are set to open to the public on Saturday, Aug. 20.

Co-Founder Blake Jones said The Mash House is going to elevate Hoosier classics using local ingredients under the direction of Chef Carlos Salazar.

“Everybody is chasing the coasts – east coast or west coast,” Jones said. “We don’t care about that. This is Indiana! We want to serve the best Hoosier food.”

That same spirit is behind their whiskey. In the spirit of farm to table dining, they make Hoosier whiskey from grain to class.

According to their website, “We create sippable, smooth whiskeys our way – always 100 percent Indiana from grain to glass. We toast to hard work and uncompromising dedication by paying respect to one of the best grain-producing states in America.”

In addition to the restaurant and lounge, there is a 5,000 square-foot event space which can be rented for weddings, fundraisers, corporate events and more.

West Fork currently operates a distillery and lounge at 1660 Bellefontaine St., Indianapolis.

When the Westfield distillery comes online in 2023, it is expected to produce more than 5,000 barrels per year. At 53 gallons per barrel, that may make the distillery one of the top 50 by volume in the United States.
