Owners of successful Carmel restaurant to open sister location in Fishers

The owners of Carmel’s Monterey Coastal Cuisine have announced that they will open a sister restaurant in the Nickel Plate area of Fishers.

Tiburon Coastal Cuisine is being launched by Paul Estridge Jr. and Chris Thomas, the local duo behind Monterey’s success.

“The success of Monterey in combination with the incredible location at First Internet Bank in the Nickel Plate district inspired us to take the next step in opening Tiburon,” Estridge said.

Tiburon is scheduled to open in early Fall 2022 at 8701 E. 116th St., Fishers, on the south side of 116th Street just west of the Interstate 69 interchange.

Monterey opened in April 2021 in downtown Carmel to rave reviews with its high-end menu of sushi, seafood and steaks. Tiburon will serve a similar but not identical menu, co-owner Thomas said.

ALO Property Group served as the listing real estate broker, First Internet Bank will serve as the landlord and Urban Space Commercial Properties served as the broker for Tiburon.

“When we began our marketing efforts, our strategy was to bring a local, superstar anchor restaurant tenant to arguably one of the best corners in Fishers,” said Gary Perel, Principal, Senior Director of Retail at ALO Property Group. We unanimously feel that Tiburon, from the uber-successful owners of Monterey Grill, is exactly the type of operator we were looking for.”
