Easy peasy summer grilling

Summer has arrived. Yes, we seem to have skipped spring this year.

Those who visit our home know that my happy place is in the kitchen, except in the summer, when I love hanging out on our screened in back porch.

I enjoy having company over to grill and spend time outside. I’ve learned not to worry about the house being ready for company. It’s even easier in the summer.

“Hey what are you doing tonight? Want to come over?”

I head to the refrigerator where the ingredients for my Summer Foil Dinner can be found.

I thought I would share our favorite summer meal, on the grill, with you this week.

The measurements are not exact. You can determine what you add.

On a sheet of aluminum foil for each person …

  • 2-3 one-inch slices of cabbage. (Even people who do not like cabbage love this meal.)
  • Smoked sausage (I use Johnsonville skinless) cut into 1/2 inch pieces. Figure how much each person would eat. I use about a half a package for two people. Place on top of cabbage.
  • Peel one large or two small potatoes, cube them and place beside cabbage.
  • Add drained whole kernel corn, slices of green and red pepper and onion and any other vegetable you like.
  • Sprinkle very generously with Extra Virgin Olive Oil and seasoned salt and/or garlic salt.
  • Seal foil tightly. If it is too full, wrap another sheet around it.
  • Place on grill at medium heat (325) for 35-40 minutes. Check and see that the potatoes are smashable before serving. If not, return to grill for a while longer. Watch that the cabbage is not getting burnt.

All I can tell you is that this recipe is ooh and awed over every time.

You can place the foil packet on a plate and serve in the foil so clean up is a cinch!

I add a bit of butter to the potatoes.
