Guests were captivated by the recent Five-Course Wine Dinner at Vivante, where an evening of gourmet dining, expertly paired wines, and lively conversation created a memorable experience.

Executive Chef Chris Coorts and Sous Chef David Leeuw, known for their culinary wizardry, took center stage to discuss each thoughtfully crafted dish and share their innovative approach to ingredient pairings. Both chefs bring an artistic touch to their cuisine, blending techniques and unexpected flavors that introduced guests to exciting combinations they hadn’t imagined.

One of the standout dishes of the night was a 48-hour braised Short Rib, served with a rich red wine reduction. This labor-intensive preparation, typically reserved for high-end fine dining, demonstrated the skill and dedication of Vivante’s culinary team. Chef David explained that a wine dinner, with its controlled number of guests, allowed them the time and attention needed to create such an intricate, carefully crafted dish. The short rib was a perfect example of the culinary team’s ability to “flex their muscles” and deliver a truly elevated dining experience.

The evening’s focus on inclusivity was also noteworthy – Vivante’s chefs ensured that every guest could fully enjoy the experience, regardless of dietary restrictions or food allergies. By offering custom menu options on request, Vivante demonstrated a commitment to making elevated dining accessible for all.

The wine pairings were equally impressive, with each course complemented by a carefully chosen selection from Justin Winery. Guests were especially enthusiastic about the opportunity to purchase bottles to take home, allowing them to relive the experience or share it with others.

Adding to the evening’s allure was Master Sommelier Joe Spellman, a true icon in the wine industry. One of only 37 Master Sommeliers in the United States, Spellman captivated attendees with his extensive knowledge, from the origins of each grape to the unique characteristics imparted by barrel aging. His insights deepened guests’ appreciation for the wines, and his passion for the craft was evident in every story he shared.

To conclude the evening, Vivante’s pastry chef, Tia Evans, prepared a decadent Chocolate Cake with Dark Berry Mousse and Mixed Berry Gelée, perfectly paired with Justin’s Cabernet Sauvignon. This dessert was a dream come true for chocolate lovers and added a memorable sweet note to end the evening.
