The Fishers Test Kitchen (FTK), a restaurant accelerator developed by the City of Fishers and Launch Fishers, has announced a pop-up restaurant concept from Chef Neal Brown.
One Trick Pony will serve up diner-style burgers and fries as part of the lineup of offerings at its location inside Sun King Brewery at The Yard at Fishers District. One Trick Pony will open on Monday, Nov. 2.
The pop-up is a full-time, temporary addition to dining options at the Fishers Test Kitchen that currently includes Korave Korean BBQ, Lil Dumplings Global Street Food, and the Signature Table (home to pop-up concepts and private dining), which continue to serve patrons at The Yard at Fishers District.
The Fishers Test Kitchen announced in September it was accepting applications from restaurant-entrepreneurs to take over the food stall at the conclusion of the One Trick Pony pop-up. Applicants will undergo a review process and a finalist will launch a new concept for the Fishers Test Kitchen in early 2021. Applicants may submit their concepts at this link.
One Trick Pony will operate out of a state-of-the-art kitchen and storefront with oversight of industry veteran Neal Brown, who also serves as a consultant to the Fishers Test Kitchen.
“Testing a restaurant concept from startup to exit at FTK gives us a chance to prove the accelerator model,” said Brown. “We will continue to seek restaurant concepts to launch in our place in 2021 with the idea of leveraging our lessons learned as an operator at FTK.”
Restaurant entrepreneurs propose new concepts for the Fishers Test Kitchen and serve Sun King Brewing customers while gaining operational support and expertise from Brown and other industry leaders. Chefs also receive business coaching and mentorship from Launch Fishers CEO John Wechsler.
